Cucumber Collins Cocktail Recipe from the Bacon Bros. Public House

At Bacon Bros. Public House, we’re known for our locally-sourced seasonal fare but if you’ve visited our bar, you're aware that we take the same care with our cocktail program. Our cocktails are crafted for the season and they are new takes on old classics. With summertime just around the corner, I start thinking about what drink I would enjoy outside on our deck at Bacon Bros. or on my patio at home, grilling pork chops with friends. My favorite go to is the Cucumber Collins. Taken from the classic Collins, the Cucumber Collins features gin, lemonade and soda water.  We add a twist at the restaurant by infusing the gin with peeled English cucumbers and fresh thyme. This adds a nice layer of complexity to an already refreshing cocktail. Homemade lemonade is a must so please follow our recipe for a cocktail that is sure to chill you out this season! 

Cucumber Collins:

1 ½ oz cucumber and thyme infused gin

1 oz fresh lemonade

Top with soda

Method:  Build over ice

Garnish:  Cucumber wheels and a fresh sprig of rosemary

Glass:  Collins


Infused Gin:

Purchasing cheaper gin here is fine.  Don’t get too caught up on which to buy but do insure that it is a London Dry gin.


In a 2-quart glass mason jar:

Add 1 peeled English cucumber, sliced into medallions

Add 1 bunch fresh thyme. 

To 1 liter London Dry Gin

Let steep for a minimum of 1 week. 

Strain and re-bottle.

Discard cucumbers and thyme



Makes 1 gallon

3 cups freshly squeezed and strained lemon juice

3 cups sugar

1.5 cups water

Heat water and combine sugar until dissolved in a 1-gallon container. Then combine sugar mixture with lemon juice, stir, fill with water, and stir.
